Hello Everyone! I have had this blog for years now, and as my personal life has changed, so have my tastes and eating habits...for the better!! I am now a fully plant-based eater, so my newer recipes will reflect this lifestyle and way of eating.

All of my old recipes will remain on my food blog, of course, so there will be a mixture of the old and the new for everyone to look through and choose. You can always play around with any recipe out there and make it your own, whether it's plant-based or not. There are always other options!

Banana Pudding from Scratch

I tried to find my grandmother's recipe for banana pudding, but I couldn't find it, so I found this recipe online from scratch.  I have to say that it's just not quite like my grandmother's, but it's still really good.  It doesn't take long to make, either!


1 3/4 sugar
3/4 cup all-purpose flour
2 3/4 cup milk
4 egg yolks
2 Tbs vanilla extract
1 box vanilla wafers
3 ripe bananas, sliced

In a casserole bowl, put a layer of vanilla wafers and then a layer of sliced banana.  Add another layer of vanilla wafers.
In a large saucepan, whisk together the sugar and the flour until well blended.  Add the milk and whisk over medium heat for about five minutes until it turns thick.  Whisk constantly.
In a smaller bowl, whisk together the four egg yolks and add the thickened, hot milk mixture.  Pour back into the saucepan with the rest of the milk mixture.  Whisk over low heat for about two minutes.
Pour the milk mixture over the vanilla wafers and banana in the casserole dish.  Stir around a bit to get the pudding mixed in well with the wafers and banana.  
Put in the refrigerator for about an hour to set, then enjoy!
