Homemade Graham Crackers (good for teething babies)

Yes, you can make your own graham crackers, and it's healthy and really easy.  If you roll them out a little bit thick, they make great teething biscuits for babies.  Want to make s'mores from the ground up, what a great thing to do with your kids!  Try them!  You'll like them!





Ingredients
1 cup all purpose flour
1 cup graham flour or whole wheat flour
1 tsp baking powder
1/4 cup butter

1/2 cup honey
1/4 cup + 2 Tbs. milk

Mix the flours and baking powder together in a large bowl.  Cut in the butter until the consistency of corn meal.  Add the honey.  Mix in with a fork well.  Add in the milk.  Stir with a fork well.  Mold into a ball of dough.  Roll out onto a floured surface.  Cut in rectangles with a knife or cut in circles with a floured glass.  Place on a baking sheet sprayed with non-stick cooking spray.  Poke holes in the crackers with a fork.  Bake at 400 for 13-15 minutes.  Enjoy!

Banana Pudding from Scratch

I tried to find my grandmother's recipe for banana pudding, but I couldn't find it, so I found this recipe online from scratch.  I have to say that it's just not quite like my grandmother's, but it's still really good.  It doesn't take long to make, either!


1 3/4 sugar
3/4 cup all-purpose flour
2 3/4 cup milk
4 egg yolks
2 Tbs vanilla extract
1 box vanilla wafers
3 ripe bananas, sliced

In a casserole bowl, put a layer of vanilla wafers and then a layer of sliced banana.  Add another layer of vanilla wafers.
In a large saucepan, whisk together the sugar and the flour until well blended.  Add the milk and whisk over medium heat for about five minutes until it turns thick.  Whisk constantly.
In a smaller bowl, whisk together the four egg yolks and add the thickened, hot milk mixture.  Pour back into the saucepan with the rest of the milk mixture.  Whisk over low heat for about two minutes.
Pour the milk mixture over the vanilla wafers and banana in the casserole dish.  Stir around a bit to get the pudding mixed in well with the wafers and banana.  
Put in the refrigerator for about an hour to set, then enjoy!
